This unique course focuses on the medicinal and nutritional applications of both invasive and native plant species. You will learn how to identify invasives such as Mile-A-Minute Vine and other non-invasive plants that hold great nutritional value. This course also covers sustainable harvesting and cooking of these plants, so that they yield the most benefits to the individual without causing harm to the surrounding ecosystem.
